Hütter Turkey & Chicken Smoked Karree

"Geselchtes", as it is called in Austria, is a cooked cured product made from certain pieces of pork meat. The pork is cured in the traditional way and seasoned according to the region. Then the piece is "smoked" in a smokehouse. The Karrestück or "Meisterbratl / Moastabratl" is part of a traditional snack in Austria, especially at Easter. As a rule, the meat is sliced and served with horseradish and light Easter bread.
