Description
Buckwheat belongs to the so-called pseudo-grain family. To make this organic buckwheat flour, the Italian buckwheat is gently and carefully ground using natural stone rollers according to the traditional method.
Buckwheat is gluten-free and contains many minerals, as well as lot of vitamin E and silica. The high iron content also makes it a valuable part of a vegetarian diet. It also contains a higher percentage of lysine (which strengthens the bones) than other types of grain.
The buckwheat flour should be mixed with other (gluten-free) flours for the best results when using it to substitute for conventional flour.
The slightly bitter, nutty flour can also be used for making:
- Galettes: Buckwheat pancakes from Brittany that are topped with hearty cheese, egg and ham.
- Buckwheat flour is also indispensable for making Styrian Heidensterz (colloquially Hoadnsterz or Hadnsterz).
