Description
Einkorn is a small, delicate grain and is one of the so-called ancient grains. Einkorn flour has a sweet, slightly nutty flavour and a low gluten content. It contains a lot of protein, beta-carotene and minerals such as magnesium, zinc and iron.
The "Type 2" classification describes a high mineral content. This means that Type 2 flours contain more of the germ and bran than the "Type 00" flours. The Type 00 flour is a particularly light-coloured flour with few minerals in it.
The einkorn flour is carefully ground using traditional methods at the Mulino Sobrino mill and is suitable for:
