The wholemeal einkorn flour by Mulino Sobrino contains lots of minerals, as the entire grain, including the outer layers and the germ, is ground to make the flour. It is rich in fibre and is a valuable ingredient for health-conscious bakers.
Einkorn is a small, delicate grain and is one of the so-called ancient grains. Einkorn flour has a sweet, slightly nutty flavour and a rather low gluten content. It contains a lot of protein, beta-carotene and minerals such as magnesium, zinc and iron.
