The name Linguine comes from the fact that the pasta has the shape of a tongue - in Italian lingua - in cross-section. This pasta made from durum wheat semolina is particularly suitable for pesto or for pasta aglio, olio e acciughe (pasta with garlic, oil and anchovies).
